Ingredients

  • 2 Carrots, medium, cut into 2-3cms
  • 1/2 teaspoon Bi Carb Soda
  • 1 teaspoon cinnamon
  • 185 grams Butter, melted
  • 100 grams brown sugar
  • 2 Eggs (80g)
  • 220 grams Self Raising Flour, or Wholemeal S.R.Flour
  • 100 grams Walnuts pieces, whole

Recipe's preparation

    Method
  1. 1. GREASE a 14cm X 21cm loaf tin, line base & sides with gladbake.

    2. PREHEAT Oven at 180 degrees ( Moderate Oven)

    3. ADD to jug Carrots, Bi-Carb Soda, Cinammon, Melted Butter, Brown Sugar, Eggs, S.R. Flour & Walnuts.

    4. COMBINE together 20 seconds, Speed 6, check to see if carrot is cut up, if not then 5sec/sp6

    5. POUR into prepared tin.

    6. BAKE for 50-60 minutes

    7. STAND for 5 minutes, before turning on to wire rack to cool

Tip

If you wish to melt your butter before combining, add butter to jug for 1min/60deg/Sp 2. then proceed with recipe.

Sultana's can be added after combining other ingredients, 10sec/Sp 3/ Reverse.

    This is great I replaced the eggs however with chia soaked in water 80-100g and it was so moist and delicious I'm in the process of making it again right now!
