Almond Biscotti
- 125 grams caster sugar
- 250 grams plain flour
- 250 grams raw almonds
- 3 egg whites

place butterfly attachment in Thermomix
wisk 3 egg whites, speed 4 until soft peaks form
gradually add caster sugar until white and glossy
remove mixture from Thermomix into a bowl, now add sifted flour and fold in gently
now add in almonds and fold in gently
now place mixture into a 3cm x 20cm rectangular biscotti tin
place in a moderate 180 degress C oven for approximately 30 minutes until golden and biscotti has come away from sides of tin
remove from oven allow to cool in tin
remove biscotti from tin
slice thinly with a sharp serated knife
place slices on a flat baking tray and place in a low temperature oven 150 degrees C for approximately 25 minutes or until dry and crisp.
store in an airtight container, serve with coffee.

VeroniqueP: Hello. It's meant to be rather dry once baked it will be bread like and once sliced and re-baked it becomes even drier again. Hope this helps.

This recipe didnt work for me, it was very dry and it seemed like the qty of almonds were too much!

Can you please confirm your quantities of ingredients? I have followed as written but am not sure if your conversions from cups to grams are correct - 250g of flour made a very dry mixture and the 125g of sugar is not possible using TM scales.
1 cup of flour = approx 130g
