Ingredients

For the Loaf

  • 2 apples, Cored and Peeled
  • 250 grams coconut cream
  • 3 tablespoons TM Yogurt
  • 50 grams coconut oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 280 grams Self Raising Flour
  • 1 tsp Bi Carb Soda
  • 65 grams castor or coconut sugar
  • 150 grams Frozen Blueberries

Recipe's preparation

    To make the Loaf:
  1. Pre Heat your oven to 170 deg and line a loaf tin with baking paper.

     

    Place quartered apples in TM bowl and chop on speed 7 for 4 secs.

    Set aside in a clean bowl.

    Place coconut oil, vanilla extract, yoghurt, eggs and coconut cream in the TM bowl and mix 10 sec/speed 4

    Add remaining dry ingredients to the bowl and mix for 10 seconds on speed 4.

    Add chopped apple and frozen blueberries and mix gently with spatula to incorporate.

    Spread mixture in the prepared loaf tin and bake for approx 50 mins or until cooked through.

     

    This loaf is very moist - let it cool completely before cutting

Cut loaf once cooled and freeze individual slices for lunchbox snacks tmrc_emoticons.)
