Ingredients

Cake

  • 60 g walnuts
  • 1 Granny Smith Apple, Large
  • 2 carrots, Medium
  • 160 g Self Raising Flour
  • 60 g full cream milk powder
  • 150 g caster sugar
  • 95 g vegetable oil
  • 2 eggs

Icing

  • 20 g walnuts
  • 20 g cream cheese
  • 1/2 tablespoon lemon juice
  • 1/2 tablespoon Butter
  • 80 g icing sugar

Recipe's preparation

    Cake
  1. Place all walnuts (both 60g for cake and 20g for icing) into bowl. Chop 2sec/speed6. Pour nuts into separate bowl and set aside.

     

  2. Peel carrots and apple and cut into chunks (minus apple core). Put in bowl and chop 4sec/speed5.

     

  3. Add in remaining ingredients and 60g walnuts and combine 8sec/Counter-clockwise operation"Counter-clockwise operation" /speed4.

    Scrape down sides of bowl with spatula then mix again 8sec/Counter-clockwise operation"Counter-clockwise operation" /speed4

     

  4. Pour batter into silicone ring tin and cook in microwave for 7 mins (depending on the strength of your microwave, you may need to cook for an additional 1-2 mins).

     

  5. Turn out cake soon after cooking and allow to cool.

  6. Icing
  7. Place icing sugar, cream cheese, butter and lemon juice into mixing bowl and combine 10sec/speed6.

     

  8. Place icing on top of cooled cake and top with remaining walnuts. 

Tip

A ring tin is essential in the microwave as microwaves don't cook in the centre. If you cook in a round pan, the cake will not cook evenly.

A double batch of the icing can be made which will be suitable to freeze for future use.

If you would prefer to make your own icing sugar, you can do that too. Use 80g raw sugar and follow instructions on making icing sugar in the front of BCB.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
