Ingredients

  • 220 grams plain flour
  • 1&1/4 tsp baking powder
  • 1/2 tsp bicarb soda
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 2 egg whites, or whole egg if you prefer
  • 4-500 grams banana
  • 130 grams brown sugar
  • 50 grams vegetable oil

Recipe's preparation

  1. Preheat oven to 180 degrees.

    2. Lightly coat loaf pan with cooking spray

    3. In a bowl, combine flour, baking soda, cinnamon and salt, set aside.

    4. Combine eggs, banana, sugar and oil in TM bowl.  Mix for 10 seconds on speed 4, or until combined, but still a little chunky.

    5. Add flour mixture to bowl and mix Counter-clockwise operation"Counter-clockwise operation" for 20 seconds on speed 4.

    6. Spoon the batter ino the pan, and place in oven or 45 to 50 minutes or until a skewer inserted in centre comes out clean.

    7. Cool in pan for 10 minutes then turn out onto a rack.  Allow to cool completely before slicing.

    Very nice. Made exactly as per the recipe but also added sultanas and walnuts at the end and sprinkled with cinnamon sugar. The main issue was we didn't realise until the end that baking powder was in the ingredients but not in the instructions. We took it out of the pan and mixed it in. Some people complained about the consistency but maybe they never added the baking powder??

    A great easy recipe. I made a few changes I used 90 grams gluten free flour 60 grams psyllium husks and 70 grams of almond meal. I had no brown sugar so I used coconut sugar. It is yum. Thank you for sharing.

    Made these as muffins, cut down the sugar and added some walnuts. The grankids LOVED them. Cooked for approx 20min as muffins.

    I used 85g sugar and 5 bananas and a lower heat. And mixed for 5 sec not 10 spead 4. I'll use even less next time. It was great!!

    Banana breadBanana bread
    Tasty, moist bread

    Playdate tomorrow & couple broen bananas had me gind this recipe. Didn't have enough banana so chucked.some defrosted banana in too, plus full 2 eggs and reduced sugar to 100g Made a very wet mixture, plus a weak oven, meant i cooked it for 1.5hrs. Was still worried it wasn't enough & g oing to be gluggy.... but it turned out beuatiful. Moist but no stodgy part!


    So tasty, toddler approved for breakfast!!

    Raquelra24:I'm yet to make banana bread with my thermomix. But maybe you could try turning your oven down to 160 instead or moving the banana bread further towards the bottom of the oven when cooking.

    Delicious. I cut the sugar right down (a tablespoon or so), used 120g wholemeal flour and 100g almond meal, and added some walnuts
