Ingredients

Banana Cake

  • 60 grams Butter, Cut into cubes
  • 100 grams raw sugar, If you don’t have raw, white sugar will work
  • 1 --- egg
  • 1 level tsp vanilla essence
  • 1 --- banana, Medium
  • 200 grams SR flour
  • 50 grams Milk, I use Full Cream Milk but skim or buttermilk will work too

Recipe's preparation

    Banana Cake
  1. 1. Preheat oven to 180 degrees or 160 degrees fan forced
    2. Line a loaf pan with baking paper
    3. Add butter to the mixing bowl, Soften butter for 30 Seconds/100degrees/Speed 1
    4. Insert Butterfly whisk
    5. Add Sugar, whip for 60 Seconds/Speed 2
    6. Scrape down the sides of the mixing bowl and whip for 60 Seconds/Speed 4
    7. Add Egg and Vanilla, whip for 60 Seconds/Speed 4
    8. Add Banana, SR Flour and Milk, whip for 30 Seconds/Speed 4
    9. Scrape down the sides of the mixing bowl and whip for 30 Seconds/Speed 4
    10. Pour mixture into prepared loaf pan and bake for 45mins, testing with skewer making sure it comes out clean.
    11. Allow to cool for 5 mins before removing from the pan.
    Serve either warm or cool
