Ingredients

Banana Cake

  • 125 grams Butter, Softened
  • 3-4 Bananas ripe, Mashed
  • 260 grams Self Raising Flour
  • 2 eggs
  • 180 grams sugar
  • 1 tablespoon bicarb soda
  • 2 tablespoon Milk

Cream Cheese Icing

  • 500 grams Cream Cheese (1pkt)
  • icing sugar, I ground down raw sugar
  • lemon juice, to taste & texture

Recipe's preparation

    Banana Cake
  1. 1. Dissolve carb soda in milk

    2.  Cream butter & sugar with butterfly, speed 4 for approx 50 secs

    3.Add eggs 1 at a time beating in each egg for about 15 secs each speed 4 remove butterfly

    4.  Add banana, flour and bicar soda & milk.  Mix approx 1 min speed 4 - adjust time if need be

    4.  Pour into a greased tin and bake in moderate oven (180) for approx 3/4 hour

     

  2. Cream Cheese Icing
  3. 1.  Mix all ingredients speed 4 for approx 1min (more if need be).

    2.  Ice cake when cooled

    Definitely meant to be 1 teaspoon of bi carb. I halved it and was still too much. 

    I also didn't pre mash the banana and added vanilla extract. 

    For the icing a put lemon rind and sugar and milled first, then added the rest. 

    vey yummy amd moist cake! Thank you

    it also turned out foul for us. It may have been a typo. Should it be baking powder not soda?  Also is it meant to be a teaspoon? So disappointing as it would have been nice otherwise and all those ingredients have been wasted. Could the author please correct?

    I made this tonight and I don't know what I have done wrong because it tastes gross. It's so so bitter. 

    I think it could be the bicarb soda. Does anyone know what it could have been?

    I was so disappointed coz it smelled so good while it was baking. 

    Oh and the cake batter tasted fine before it was cooked.

    so yummy! I didn't pre-mash the bananas, just put them in and whizzed it up for a bit. I ended up making them in a cupcake tray thinking I could put them in my son's lunchbox for kindy. I haven't even made the icing and they're half gone. I don't think there will be any left when he goes to school next. Might have to leave a few bananas on my bench to go brown just so I have an excuse to make these again!
