- 2 bananas
- 100 g dates
- 125 g vegetable oil
- 2 eggs
- 190 g brown sugar
- 1 tsp bi-carb soda
- 1/2 tsp cinnamon
- 370 g Self Raising Flour

I'm cooking this todayRecipe's preparation
1. Preheat oven to 150c.
2. Add dates to bowl, chop for 10 seconds, speed 7.
3. Add eggs, vanilla, oil & banana. Mix for 20 seconds, speed 5.
4. Add sugar, flour, cinnamon & bicarb soda. Mix for 20 seconds, speed 5.
5. Spoon into lined muffin tray & bake for approx 25 minutes.

These Banana and Date Muffins are delish !!!
I only used 100g sugar, and 3 small bananas.
Sometimes I add some choc chips too...
I needed to use up some bananas this recipe was delicious the only change I made was I used coconut oil instead of vegetable oil
Easy and delicious. As others said I halved the sugar and was the perfect sweetness and I used an extra banana as mine were not that big. Added dark choc chips too

How many calories would be in these ?
I used only 80g sugar and added some dried peach and pear. Plenty sweet enough. Also, I substituted half the oil for pear juice, which worked a treat. 😁
So good!! Not your usual banana muffins!! Have a very fussy eater who has given them the thumbs up so very happy! Thank you so much! No variations required, recipe is perfect the way it is!

I use this recipe all the time. It's great. I also use coconut oil, and mix it up with a few chocolate chips now and then. 😋
Great Recipe! I'm another who used coconute oil instead, and halved the sugar to 90grams (using half brown and half rapadura). They were very sticky so I think adding a bit of milk next will be better... as it was very hard to get them into the paper cups in the muffin tray!lol. But they turned out nice thank you..
