Cake Mixture

  • 300 grams Self Raising Flour
  • 120 grams Butter
  • 220 grams sugar
  • 2 eggs

Lemon Curd

  • 60 grams lemon juice
  • 60 grams Butter
  • 110 grams sugar
  • 1 egg

Recipe's preparation

  1. Preheat oven to 180 degree celsius (160 degrees for fan forced oven)

     

    Cake Mixture

    Place all 'cake mixture' ingredients into TM bowl and beat for 30 seconds on speed 5.Remove from bowl and set aside.

     

    Lemon Curd

    Place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.

     

    Cake

    Grease and line a 20cm round or square cake tin.

    Spread half the cake mixture into the base of the tin - the cake mixture will be quite thick.

    Pour hot lemon curd over cake mixture.

    Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.

     

    Bake in 180 degree celsius oven for 30 minutes. 

     

    Eat hot or cold with cream or ice cream.

    Quick Easy and Delicious

    I had a lot of lemons to use up so this recipe was ideal.
    As always in cake recipes, I reduced the sugar content in both the curd and the cake mix and it was still beautiful and sweet.
    @harryanne01 may I suggest you change this photo. I don't know whether it's just me but I was turned off making this cake for ages as I thought it looked like scrambled eggs. 😅
    It was only after all the positive comments (made about this recipe) I read on different Facebook groups that I decided to give it a go...so glad I did.
    I missed the oven alarm as I was outside chatting and although I accidentally over cooked it, it was still delicious.

    Many thanks, worked really well, reduced sugar in cake mix down to 150g. I'm happy with the taste. Was much quicker to make than I thought. Great cake!

    OMG this was simply wonderful! Love  The cake was dense and perfectly moist and the rich lemony sauce just made it!! I used 40gm lemon and 20gm orange because I only had one lemon handy - yuuummmm.

    Really quick and easy cake to whip up. Mine sunk in the middle after I pulled it out of the oven, but it was likely my bad oven. Didn't affect the taste though.Nice crisp outer, super yummy, oozy lemon curd in the middle. tmrc_emoticons.)
