Ingredients

Base, Caramel & Topping

  • 150 grams plain flour
  • 110 grams brown sugar
  • 40 grams Desiccated Coconut
  • 225 grams Butter - softened
  • 395 grams Nestle Condensed Milk
  • 80 grams golden syrup
  • 200 grams Chocolate Melts - milk or dark
  • 10 grams coconut oil

Recipe's preparation

    Base
  1. 1. Preheat oven 180deg/160deg fan forced. Lightly grease/line with baking paper a 28cm x 18cm lamington pan.

    2. Combine flour, sugar and coconut 6 seconds, speed 6.

    3. Add 225g softened butter, mix well, 10 seconds, speed 6. Scrape down sides and repeat, 10 seconds, speed 6.

    4. Press firmly into pan and bake for 15-20 minutes until lightly browned. Cool.

  2. Caramel
  3. While base is baking.

    4. Combine 100g softened butter, condensed milk and golden syrup in bowl. Mix 8 minutes/70deg/speed 3. 

    5. Pour over base. If mixture seems stiff, mix for 6 seconds/speed 4 before pouring. Bake 20-25 minutes or until caramel is golden brown. Cool.

  4. Topping
  5. 6. Grate chocolate melts 10 seconds/speed 8.

    7. Scrape down sides, add coconut oil and melt 5 minutes/50degs/speed 1.

    8. Scrape down edges and melt for a further 5 minutes/50deg/Gentle stir setting"Gentle stir setting" .

    9. Pour evenly over caramel base once it has had time to cool and harden slightly.

    10. Refrigerate to set. Cut into triangles or squares to serve.

Tip

This recipe has been converted from my very favourite carmamel slice recipe.

    S-J:Yes, I realised I didn't drop the 100g of butter in the base, but I didn't really think anyone would make it seeing it doesn't have a photo and is the very last recipe out of all the caramel slices. I just left it up for my own reference.
    As for the caramel, it is correct with 1 tin of condensed milk. It does not need 2.

    Base step 3 should be 125g butter not 225.
    Carmel should be 2x 395g condensed milk
