- 300 grams bananas, chopped
- 150 grams raw sugar
- 2 eggs
- 125 grams Butter, chopped into cubes
- 70 grams buttermilk
- 1 teaspoon vanilla extract
- 260 grams Self Raising Flour
- 1 teaspoon bicarb soda

Always ensure the MC is on at all times.
Place bananas into the bowl and blend SPEED 5 for 3 SECONDS. Scrape down sides.
Add sugar, eggs, butter, buttermilk and vanilla extract into the bowl. Blend 5 SECONDS on SPEED 5. Scrape down sides.
Add self raising flour and bicarb soda. Mix for 10 SECONDS on SPEED 5.
Pour mixture into lined, circular 22cm diameter spring form tin. I always spray olive oil spray onto the sides of the tray to ensure it doesn't stick.
Bake in a moderate oven for 50-60 minutes, depending on your oven.
Use a skewer and poke in the middle. If it comes out clean, the cake is cooked.

Pre-heat oven to 180c or 160c for fanforced oven
Tip
300grams of bananas is an approximate. I always use 3 large bananas.
I used fresh buttermilk left over from when I made butter. Before my Thermomix, I used store bought buttermilk and it worked fine.
I cannot remember where this recipie originated (it's not my own). I have had it in my collection of receipies for a very long time. I recently converted it to use in the Thermomix so everyone can enjoy it here too.
Sugar quantity can be reduced depending on how sweet you like the cake.

Very nice banana cake & a great way to use browning bananas! I used about 90g of sugar and it's plenty sweet enough, especially with the cream cheese frosting on top 😋😋. Very light & moist. Thanks for sharing this yummy recipe.
I now only use 150grams raw sugar for this recipe. It still is sweet enough! You can also reduce it further if necessary.

Thanks for this recipe. I made this yesterday, beautiful moist cake. I topped it with cream cheese frosting, and had plenty of compliments. Will definately make this again!
