Basic Biscuits
- 400 grams White or raw sugar
- 500 grams Self Raising Flour
- 2 eggs
- 250 grams Butter
- 1 teaspoon Pure Vanilla extract or vanilla bean paste
- 1 pinch salt

Place sugar in bowl and mill for 20 seconds on speed 10
Add butter and mix at speed 7 for 20 seconds
Add all remaining ingredients and mix for 6 seconds on speed 8
Dough will be quite crumbly - pour on to a Thermomat or flat surface and press dough together lightly. Taje about a tablespoon of dough and roll into a ball then flaten and place on a baking tray lined with baking paper.
Cook for approximately 12 minutes in a pre-heated 180 degree oven (or until edges appear slightly golden) Allow biscuits to cool slightly on tray until they are firm enough to transfer to a plate.
Tip
This is a great basc recipe that kids will love in their lunchboxes. You could vary the recipe by:
Add choc chips on top of cookie prior to baking for a choc-chip version
Adding Cocoa to half the mix and rolling both plain and chocolate together to form a marbled cookie
Add smarties or M & Ms prior to baking for a dotty cookie
Sprinkle with Cinnamon Sugar for Cinnamon Cookies
Adding white choc bits and Macadamia Nuts for a decadent cookie
This mixture freezes really well rolled into a log and wrapped in glad wrap - ready for baking when you need it

I halved the ingredients and it all worked fine
great batter- but i found when adding the Rest of the ingredints Martha- my thermo wouldnt do any speed as it was to thick. I had to play with the mixture quite a bit in the bowl and then just ended up taking out the WHole lot into another bowl to mix. I even added a can of Sweeten Cond Milk towards the end to see if a bit more wetness helped the blades but it didnt. After the butter it just didnt work in Martha at all.
