Ingredients
- 1/2c Black Rice
- 80 grams Rapadura Sugar
- 80 grams butter, chilled, cut into cubes, (use coconut oil for dairy free option)
- 2 tablespoon sesame seeds
- 1 tablespoon chia seeds
- 1 tsp ground ginger
- 85 grams Gluten free plain flour, (I use Orgran brand)
- 1 egg
- 1/2c good quality dark choc bits, (make sure its dairy free for dairy free option)

- Preheat oven to 180 degrees celcius. Line two baking trays with baking paper.
- Place rice in TM bowl and mill on speed 10 for 1 minute. Set aside. No need to clean bowl.
- Add butter and sugar to bowl and whip on speed 5-6 until pale and light. (I needed to scrape down a couple of times).
- Add egg and continue to mix on speed 4 until thoroughly combined. (a few seconds)
- Add flours, seeds, ginger and chocolate and mix on speed 3 until combined.
- Place heaped teaspoons of mixture onto trays, allowing a small amount of room to spread.
- Bake for 15-20 minutes, or until golden brown around the edges.
- Leave to cool slightly on tray for 5 minutes before placing on a cooling rack.
- Store in an airtight container.
- Makes approx. 25-30
Tip
Can be made egg free - omit the egg and increase chia seeds to 2 tbs. Decrease sesame seeds to 1 tbs and add 2 tbs water when adding the seeds to the mix.

These are lovely! Thanks for the recipe. I didn't have black rice so just used basmati instead. These will be great for my kids lunch boxes at school as they contain no nuts.The one ingredient that is hard to avoid in a good GF biscuit! My kids enjoyed them so much that I had to say no when they came back wanting thirds! I have not told them they contain seeds as they may screw there nose up and refuse them. Same with the ginger, which was an ingredient I hesitated at almost omitting but decided to go with it, it really works well. Who would have thought ginger, sesame seeds and choc chips would go together! Thanks again. Peta

YUUUUMMMMMMM this is just wonderful!!!! I might hide them just for me!! Loved it!!! I just omitted ginger because I don't like it, perhaps I wouldn't even taste it?
