- 170 grams brown rice
- 100 grams raw almonds
- 70 grams Self Raising Flour,or Gluten Free Self Raising Flour, (would work fine with wheat flour if not avoiding gluten)
- 90 grams Rapadura Sugar, (raw or brown would work fine)
- 2 tablespoons chia seeds
- 200 grams coconut milk
- 2 eggs
- 2 tablespoons oil
- 150 grams fresh or frozen cherries, pitted and halved
- 2 handfuls shredded coconut

- Preheat oven to 180 degrees celcius. Lightly grease a 20cm round cake tin and line the bottom with greaseproof baking paper. (I used a 26cm oval baking dish as seen in the pictures, which would equate in size roughly to a 20cm round pan). 2. Place the halved pitted cherries evenly on the base of the baking pan. Scatter the shredded coconut on top. 3. Place rice in your dry mixing bowl and mill 40 sec/speed 9. Add almonds and mill for a further 20 sec/ speed 9. 4. Add the flour, sugar and chia seeds and blend 10 sec/speed 5. 5. Add coconut milk, eggs and oil and blend 15 sec/speed 5. Scrape bowl and blend for a further 15 sec/speed 5. 6. Pour batter over the cherries and coconut. Place in oven and bake until cooked through - approx 40-45 minutes. 7. Leave to cool in tin for 5 minutes before turning out and gently peeling off the paper. Serve with the cherries facing up, dusted lightly with cocoa powder if desired.
