Ingredients

Batter

  • 100 g raw almonds
  • 100 g raw sugar
  • 2 pieces lemon rind, 1cm x 5cm each
  • 75 g plain flour
  • 1/4 tsp baking powder
  • 150 g melted butter, cooled
  • 4 egg whites
  • 150 g fresh or frozen blueberries
  • icing sugar, to serve

Recipe's preparation

  1. Preheat oven to 180°C. Grease a 3cm deep 16 x 26cm slice tin. Line with baking paper, allowing for an overhang.

     

    Mill almonds 10 sec/speed 9. Set aside.

    Combine sugar and lemon rind 10 sec/speed 9. Scrape down bowl.

     

    Add flour, baking powder and reserved almond mixture. Combine 5 sec/speed 5. Scrape down bowl.

    Add melted butter and egg whites. Combine 9 sec/speed 5.

     

    Pour mixture into prepared cake tin and press blueberries into top of mixture. Bake for 30 mins or until skewer comes out clean. Stand in pan for 10 minutes. Lift out onto a wire rack to cool. Cut into pieces.

     

    Dust with icing sugar to serve once completely cool.

     

Tip

Blueberries can be exchanged with raspberries if preferred
