Ingredients

  • 250 gram Plain Flour.
  • 400 gram caster sugar
  • 75 gram cocoa
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 --- cup milk
  • 1 Cup Cold Coffee
  • 100 ml vegetable oil
  • 2 teaspoon vinegar

Recipe's preparation

    1. Preheat oven to 180 degrees C. Grease and flour a 23x33cm cake tin.
    2. In the jug, combine the flour, sugar, cocoa, baking soda, baking powder and salt. and mix on Speed 7 for 5 Seconds. 
    3. Add in the eggs, coffee, milk, oil and vinegar. Mix on Speed 7 for 10 seconds, then scrape down and then mix again on Speed 7 for 5 Seconds
    4. Pour into prepared tin and bake for 35-40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool in the tin before slicing and serving.

    I use a simple buttercream  icing which is 250g butter softened.  Mix on Speed 5 for 30 seconds.  Add in 320g Icing Sugar, 50 g Cocoa and 60 Whole Milk and mix on Speed 5 for 20 Seconds.

Tip

This mixture will be very runny, but it turns out perfect and is a lovely moist cake that cuts nicely.

    The best chocolate cake I've ever made, everyone raved about it! I made this again Carrie, used a smaller springform and also some cupcakes out of one mix! Definitely my go too now! Cheers!
