Ingredients

Cookie dough

  • 250 g macadamia nuts
  • 125 g Butter, softened
  • 275 g brown sugar
  • 250 g Granulated sugar
  • 2 --- Eggs, Large
  • 2 tsp vanilla extract
  • 420 g flour, all purpose
  • 1 tsp salt
  • 2 tsp baking soda
  • 250 g White Choc Chips

Recipe's preparation

    Chop macadamia nuts
  1. 3 SECONDS, SP4 Closed lid"Closed lid"

     

  2. Cream butter and sugars
  3. Add sugars to bowl, combine for 20 SECONDS, SP8

    Add butter to bowl, chop 5 SECONDS, SP8

    Insert butterfly whisk, whip for 4 minutes, SP8, until butters and sugar look light and fluffy (the mixture will have increased in size)

    Add eggs one at a time then vanilla, while whisking for 15 SECONDS, SP5

  4. Add flours and choc/nuts
  5. Add flour, baking soda and sal to the mixture

    Combine for 30 MINUTE , Counter-clockwise operation"Counter-clockwise operation" SP4

    Add nuts and chocolate bits, combine for 1 MINUTE Counter-clockwise operation"Counter-clockwise operation" SP3 with aid of spatula

    If the resulting mix does not look thoroughly combined, repeat last step.

  6. Prepare cookies
  7. Pre-heat oven to 180 degrees C

    Grease and line 2 baking trays, set aside

    Using teaspoon, place round balls onto the prepared trays, ensuring there is at least 2 cm in between each ball of dough.

    Each tray will hold around 12 balls, repeat for with remaining dough once the first batch is cooked

    Cook in 180 degree C oven for 13-15 minutes (depends how chewy you want the biscuits)

    Cool on wire racks.

    Store in plastic container to keep the cookies chewy.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
