- 130 grams Butter
- 180 grams Dark Brown Sugar
- 1 teaspoon vanilla essence
- 1 egg
- 160 grams plain flour
- 80 grams wholemeal self-raising flour
- 90 grams dessicated coconut
- 120 grams chocolate chips

Place butter, sugar and vanilla essence in bowl and mix on Speed 4 for 40 seconds or until creamy.
Add egg and beat on Speed 4 for 10 seconds.
Add flour, SR flour, coconut and mix on Speed 4 for 20 seconds.
Either add choc chips and mix on "Counter-clockwise operation" on speed 1 to incorporate choc chips or I prefer to mix through with spatula.
Roll spoonfuls of mixture into balls and place on trays lined with baking paper. Flatten slightly and bake for 12-15 minutes. Stand on trays for 2-3 minutes before transferring to a wire rack to transfer completely.
WARNING: This makes a seriously delicious cookie dough.

Great recipe, but I used only 100g of sugar and that was sweet enough
Can't say I'm a huge fan of these cookies. Firstly they never actually made it to the oven, the dough just disappeared in front of me and secondly, I am meant to be losing my baby weight and these have ruined it. I may have to lose this recipe before I decide to just live on this cookie dough forever! Thanks for this, it is a brilliant recipe! SO tasty!
Wow!! This recipe is definitely a keeper. Such glorious smells as the cookies are baking and such moreish morsels to eat! These will no doubt be devoured as fast as they can come out of the oven.

Oh my word that is one hell of a cookie dough! I loved it so did my girls - probably would have made a few more cookies if we hadn't tried it! So easy aswell.
