Ingredients

Chocolate, Zucchini and Espresso Muffins FODMAP friendly

  • 80 g cocoa powder
  • 200 g almond meal
  • 60 g tapioca flour
  • 150 g zucchini, Roughly chopped
  • 50 g Butter, or non dairy version of choice
  • 3 tablespoons almond butter
  • 3 tablespoons Maple syrup
  • 3 tablespoons Coconut sugar
  • 2 tablespoons coconut oil
  • 2 --- eggs
  • 125 g Almond milk
  • 2 tablespoons espresso
  • 2 level teaspoons Baking Powder, gluten free
  • 3 level teaspoons apple cider vinegar

Recipe's preparation

  1. 1. Preheat the oven to 180 °C. Lightly grease a 12 hole muffin tin
    2. Place 150g of Zucchini in the bowl Closed lid"Closed lid"
    3. Gentle stir setting"Gentle stir setting" Speed 8 for 10 seconds with the measuring cup or until zucchini is finely chopped
    4. Add remaining ingredients into the bowl
    5. Gentle stir setting"Gentle stir setting" Speed 3, for 2mins 30 seconds measuring cup on or until mixture is combined
    6. Pour evenly into prepared muffin tin/s
    7. Place into oven for 15-20 minutes or until a skewer comes out clean
    8. Transfer to wire rack to cool completely
    9. Icing optional!

Tip

You can substitute in any nut butter you prefer.
You can swap zucchini for carrots also
If you are dairy free simply
swap the butter for your preferred non dairy alternative

I found this makes up to 24 small muffins or 12 large muffins
