Ingredients
Biscut base
- 25 grams Butter
- 150 grams spelt flour
- 75 grams Maple syrup
- 45 grams almond meal
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla
Caramel Filling
- 30 grams coconut oil
- 30 grams Cashews or cashew butter
- 12 Medjool dates, pitted, soaked
- 70 grams Raw Honey
Chocolate Topping
- 150 grams Chocolate of your choice

1. Melt butter - 2 mins, 50 degrees, speed 1 (or longer if you need it)
2. Add remaining base ingredients and mix on reverse, speed 4 for 15 seconds or until dough comes together.
3. Turn out onto floured surface or thermomat, roll out to desired thickness (I did mine about 0.5cm).
4. Cut out biscuts using thermomix MC, place on baking paper and cook at 180 degrees for 12-15 mins (biscuts should just be starting to brown lightly).
1. Melt coconut oil, 2 minutes, 50 degrees, speed 1 (or more if you need it).
2. Add remaining ingredients and blitz on speed 9 for 5 seconds. Scrape down edges and repeat. You may need to do this a few times if you used cashew pieces. Repeat until you have a desired consistency, depending on how rustic/chunky you want the filling to be!
3. Place approximately 1 teaspoon of filling onto each biscut and press down/smooth out to almost cover the biscut.
4. Place in the freezer for about 20 mins before moving on to the topping.
1. Grate chocolate on speed 9 for 10 seconds, then melt 2 minutes, 50 degrees, speed 3.
2. Drizzle, dollop or dip your biscuts - however you like!

Using cashew butter will give you a smoother result, but if you don't have it, raw cashews work fine.
Make your own almond meal by simply milling raw almonds in your thermomix.
Use a good quality chocolate to keep this recipe "clean" - I like a sugar-free, high cocoa % dark chocolate.

What could you use to replace almond meal? Almond allergy but ok with other nuts
