Ingredients

mixture

  • 130 grams almond meal
  • 2 1/2 tablespoons coconut oil
  • 30 grams cocoa nibs
  • 2 tablespoons Maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt flakes
  • 1/4 teaspoon baking powder

Recipe's preparation

  1. Preheat oven  to 170 degrees celcius

    To make almond meal, place 1 heaped cup of almond into your Thermomix.  Process  speed 7, 10 sec

    Add all remaining ingredients into bowl Reverse, Speed 4, 4 sec

    Place desertspoonfuls of mixture on to a tray lined with baking paper and flatten slightly with a spoon.

    Bake for 15 minutes until goldern.

    NB. they will be soft when removed form the oven but will firm up as they cool.

    Store in a sealed container for up to 5 days.

     

Tip

This is a healthy alternative to chocolate chip cookies.

To make double choc cookies, add 1 tbs cacao powder and if you don't have caco nibs,  you could use 1/4 cup dark chocolate chips
