Ingredients

For Slice

  • 300 g Desiccated Coconut, (organic as it contains no sulphur dioxide preservative)
  • 100 g sultanas
  • 60 g Cranberries/Craisins or Goji Berries
  • 50 g cacao nibs
  • 2 tsp vanilla essence
  • 100 g "Natvia", (Stevia and Erythritol, equal in sweetness to sugar)
  • 50 g pre-ground "Sugarless" Stevia, (Stevia and Erythritol, twice as sweet as sugar)
  • 4 eggs, large
  • OR FOR EGG-FREE
  • 140 g besan flour, (or pre-grind your own from chick peas)
  • 250 g water

Recipe's preparation

    THIS IS A NO ADDED SUGAR RECIPE
  1. THERE IS SUGAR IN THIS RECIPE IN THE DRIED FRUIT. (And a small amount of sugar in the Coconut and, if using, the Besan flour.)

    Each serve of slice contains about 4g or 1 teaspoon of sugar from these sources. The only free sugar in this slice is the amount that is added in the manufacture of the craisins, if using. The Whole Health Organisation recommends no more than 6 teaspoons of free sugar per day for adults, half this amount for children, and none for babies under 12 months of age.

    PLEASE NOTE - THE INGREDIENTS SHOW 100g OF NATVIA & 50g OF SUGARLESS. IT SHOULD SHOW TO USE ONE OR THE OTHER, NOT BOTH. (I have been unable to edit the ingredients to get this fixed.)
  2. For Slice
  3. 1. Preheat oven to 140C (fan-forced)



    2. Prepare a slice pan (18cm x 26cm) by greasing with coconut oil, and lining base with baking paper.



    3. If using "Sugarless": weigh into TM bowl & grind for 10sec/sp9.

    If using chick peas: weigh onto TM bowl & grind for 1min/sp9. (This will be very noisy.)

    If using chick peas and "Sugarless": weigh onto TM bowl & grind for 1min/sp9. (This will be very noisy.)



    4. Weigh/place all ingredients in your TM bowl.



    5. Mix for 10sec/Counter-clockwise operation"Counter-clockwise operation" /sp3. Scrape down & repeat if necessary.



    6. Empty the mix into your slice pan and press down - keep mix at an even height in your slice pan.



    7. Bake for 30mins until edges are browned. The top will be slightly firm to touch.



    8. With Egg: Allow to cool in slice tin for 10 minutes before cutting into roughly 4cm x 4cm squares. Leave in slice tin until cool.

    Egg-free: Cut into roughly 4cm x 4cm squares immediately. Leave in slice tin until cool.



    9. Store in a covered container in the fridge.

Tip

One of my favourite low sugar slices.

Suitable for school lunch boxes.

Suitable for TM31 & TM5.

The egg-free slice is yellower and more crumbley.
