Batter

  • 25 grams Rapadura Sugar, Or any other sugar
  • 25 grams Coconut sugar
  • 25 grams macadamia oil
  • 25 grams Butter
  • 30 grams Buttermilk or Milk of your choice
  • 3 eggs
  • 1/2 teaspoon baking powder
  • 45 grams Coconut Flour
  • 30 grams dark chocolate chips
  • 50 grams Frozen Blueberries
  • 1/2 teaspoon salt

Recipe's preparation

  1. These muffins are quite sweet so you could lower the sugars conetnt if you wish, they are nice and light and fluffy.. if you have ever baked with coconut flour you will understand how tempermental the flour can be. the eggs are essential to help with binding and liquid content. you could add any fruits you like! 

     

    pre heat oven to 200 degrees fan forced

     

    mix in bowl the sugars, oil, butter, milk, eggs, salt and baking powder on speed 6 for 10 seconds.

     

    add in the coconut flour to the bowl and mix together on speed 4 for 20 seconds.

     

    add blueberries and choc chips mix Counter-clockwise operation"Counter-clockwise operation"  Gentle stir setting"Gentle stir setting" for 15 seconds .

     

    spoon mixture into cup cake papers sprayed with cooking oil, place the papers into muffin trays. and bake in fan forced oven 190 degrees for 20 minutes.

    allow to cool for 10 minutes before serving.

store in a airtight container for up to 3 days or covered in the fridge for up to a week.

    Just made these. Reduced the sugar some. The mixture didn’t look right so I added more flour and an egg and I still only got 8 patty pans. They are tasty but I would like to make 12 if I am going to the trouble.

    i just made these exactly as the recipte - only just made 8 small muffins and they didn;t cook were just sludge..

    I've just made these. Not exactly this recipe but I used this recipe a a base to make banana choc chip Muffins. I used super old brown bananas from the freezer and just used coconut sugar. I upped the amount of coconut flour and probanly should have added another egg. I also could have lessend the sugar too as the bananas would've even sweet enough! But otherwise happy! Thanks for a great recipe!
