Best Ever Chocolate Fudge Brownies

  • 200 grams Butter, chopped
  • 200 grams dark chocolate, broken into pieces
  • 150 grams brown sugar
  • 3 eggs
  • 2 teaspoons vanilla essence
  • 100 grams plain flour
  • 2 tbsp cocoa powder
  • some soft icing sugar, to dust

Recipe's preparation

  1. * Preheat oven to 160-180 degrees celsius (fan forced). Line a 5cm deep, 18cm base pan with baking paper


    * Add chocolate to jug, chop for 6 sec, sp 8.

    * Add butter and brown sugar. Melt - 4.30min, 75deg, sp 0.5 reverse (or until completely melted)

    * Add eggs and vanilla to chocolate mixture - 15sec, sp3

    * Add flour and cocoa to mixture - 15sec, sp3

    * Pour brownie mixture into pan. Bake for 20 mins, or until just set.

    * Set aside to cool. Once cooled, lift out of tray/dish and wrap in plastic wrap. Place in fridge overnight. Cut into pieces, and dust with icing sugar. Enjoy!

Tip

* Use block butter, not spreadable
* Use normal eating chocolate, and has to be DARK (Aldi brand is my fave)
* I cook these for 20 mins in my oven, that gives me very fudgey pieces in the middle, and slightly more cakey on the edges - i like having the variety of textures, and i prefer the cakey part on the edges...but most other people love the fudgey parts from the inside! Adjust your cooking time to get the result that you desire.

    Just came back to say we used this recipe to make Blondies as we accidentally bought white chocolate instead of dark and as always, we make a double batch!
    400g white chocolate
    225g plain flour (to make up for the cocoa as well)
    2 Tbsp vanilla paste
    The rest of the recipe the same. Cook for 30mins - delish!

    I make a double batch each time I make this recipe (TM5), and they are just "melt in your mouth" my youngest says. We get between 20-24 brownies per doubled batch, and they go quick! We use 20g dark chocolate and 200g of milk chocolate. Thank you so much for such a reliable recipe 🙏

    Very easy. I used Costco Kirkland dark chocolate chips - you don't have to blitz them at the start, just add the butter and sugar and melt. Happy family!

    Yummy!! Perfectly dense and fudgy! I used Old Gold Roast Almond to give it some crunch. Also i was 40g short on butter but topped it up with coconut oil and it still turned out great! Will definitely be saving this one to make again!

    Yum!!!!! I used old gold chocolate and made as per directions cooking at 160 for 20mins. We couldn’t wait until it was cold to try so tried it while still warm. It was loved whole family
