Ingredients

  • 425 gdried mixed fruit
  • 300 mls strong black tea
  • ½ medium orange
  • 1 lemon
  • 175 g brown sugar
  • 1 egg
  • 1 pinch salt
  • 1 heaped teaspoon of Mixed Spice
  • 220 g plain flower
  • 1 tablespoon baking powder, (20 ml)

Recipe's preparation

  1. Soak fruit over-night in strong black tea at room temperature, covered.  (Three tea bags in 300mls of boiling water, steeped for at least 20 minutes)

    Pre-heat oven to 180degC

    Pulp the chopped lemon and orange on Speed 9-10 for 4-5 seconds.

    Add fruit and soaking liquid, brown sugar, egg, salt and mixed spice.

    Mix thoroughly for a good minute on reverse speed 4.

    Sift flour and baking powder and then add gradually to the fruit mixture on reverse speed 3-4.  Let sit for a few minutes to let the flour bloom, then mix one more time on reverse speed 4.

     Grease a 23 x 13 cm loaf tin (line bottom of loaf time with baking paper, line the sides if you wish).

     Pour mixture into loaf time and place in the pre-heated oven (conventional heat rather than fan forced) for 1 ¼ hours on a low rack.  Allow to cool before turning out.

    If using a fan forced oven shorten the cooking time to 50min and check to see with a skewer how much longer the loaf will take (setting the loaf on a middle rack of the pre-heated oven).

Tip

Scrape down the sides of the TM bowl and the underside of the lid after the citrus has been pulped as it is important that all the pulp is used.  If not mixed well it tends to burn on the sides and the top of the loaf.

Sifting the flour and bakingpowder on some baking paper and then adding it through the hole in the hole in the lid of the TM is the best way to combine these ingredients into the mixutre.

If the mixture doesn't seem "cake batter" like, add another 10gms of flour until the desired consistancy is achieved.  The juice in the lemon and orange can add a little too much liquid depending on the citrus season.

This loaf is a very moist loaf and can be eaten by itself rather than a smothing it with butter.

    Sounds Delicious And I'll try it one day, but I have a large amount of orange pulp to use, so I'm looking for something like a loaf for orange and poppy seed.  Happy cooking!
