  • 150 grams Gluten free plain flour
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon Nutmeg
  • 1 1/2 teaspoon bicarb
  • 1/2 teaspoon salt
  • 2 eggs
  • 80 grams coconut oil
  • 150 grams Rice malt syrup
  • 1 teaspoon vanilla

Recipe's preparation

  1. Weigh 500g of water into the TM jug. Place basket inside, and fill with 420g cubed pumpkin. Cook on Varoma, 10 minutes, speed 2.

    When pumpkin is cooked, use spatula to remove basket, empty water from jug, and tip pumpkin into jug. Mix for 5 seconds at speed 4.

  2. Add all dry ingredients and mix for 10 seconds at speed 4. Scrape down sides of bowl, and mix for 4 seconds at speed 4.

  3. Add remining wet ingredients, and mix for 10 seconds at speed 4. If needed, scrape down sides of bowl and mix for another 4 seconds at speed 4.

  4. Spoon mixture into greased muffin trays or cupcake liners, and bake at 180*C for 25-30 mins depending on size. Wrap and freeze individually to use as required in lunchboxes (if they last that long!)
