- 3 ripe bananas, peeled
- 10-15 dates
- 80 g caster sugar
- 240 g Gluten-Free Self Raising Flour
- 150 g Butter, room temperature
- 2 eggs
- 1 heaped teaspoon cinnamon powder
- 1/2 teaspoon bicarbonate of soda
- 40 g Milk
- 1 tsp vanilla essence
- 1/2 teaspoon baking powder
- icing sugar for dusting, optional

- 1. Preheat oven to 160 C
- 2. Place bananas, dates and vanilla essence in the bowl and mix for 5 seconds on speed 4. Set aside.
- 3. No need to rinse out bowl. Add butter and caster sugar and mix for 20 seconds on speed 5.
- 4. Add the eggs one at a time and combine each for a few seconds on
- speed 5.
- 5. Add the banana mixture and cinnamon, and mix for 3 seconds on speed 5.
- 6. Add the flour, bicarbonate of soda, baking powder, and milk and mix for 15 seconds on speed 4 to 5.
- 7. Pour into a lined 20cm cake tin and bake in the oven for 1 hour.
Tip
- * If cake still looks wet after this time reduce the temperature to 140 C and cook for a further 10 to 20 minutes.
- * If cake is over browning but still wet, place a sheet of aluminium foil on top to slow down the browning process.
- * Wait 10 minutes before turning out of the cake tin.
- * The amount of cinnamon powder can be increased or decreased according to personal taste.
- * I decrease the amount of caster sugar I use the more dates I add.
- * Icing sugar is optional for sprinkling on the cake once cooled!

Made this yesterday, was a little disappointed as we found it very dry and not real flavoursom.
Had to warm it up to get some moisture back into it.was a little disappointed.
Verdict was not to give a second go.

Delicious and with a great texture! I didn't bother setting aside after step 1 and it still turned out fine. I used less sugar and only had two bananas. Awesome recipe with a bit of room for swapping and changing without causing it to fail. It's in my collection for sure
Very nice recipe but the method was a bit convoluted. Perhaps, after chopping the dates on speed 7 for 5 seconds, just add all the ingredients and mix with the backwards blade on speed 6 for ten seconds or so. Make sure the sides are scraped down and mixed in. It's much easier to do it this way.
Great super easy recipe. Can't go wrong! I love that the dates add most of the sweetness with much less refined sugar than most cake recipes. I made it for sausage sizzle at school and all the kids loved it - even the ones who aren't gluten-free. Will definetely add to my collection. Thanks
These were great. I made them into muffins and mini muffins for my 10mth old and school lunches. Hopeing they freeze well!
An easy and forgiving recipe. I used panella and pulverised it at the beginning and so the sequence of my steps was out because I didn't feel like putting it aside It turned out beautifully. I could imagine putting it into ramekins and cooking it bain marie and serving with custard when warm.
Definitely a recipe that is good on its own but customisable for preferences. I'll be making this one again!
I accidently forgot to add the milk, but it so turned it beautiful and fluffy. Phew! I added walnuts to the top, and swapped caster sugar for coconut sugar. Yum!
