Ingredients
Gluten Free Berry Muffins
- 250 grams raw almonds
- 2 teaspoons baking powder - Gluten Free
- 1 teaspoon ground cinnamon, or grind your own in TM
- 4 --- eggs
- 50 grams olive oil, or other oil of choice
- 2 tablespoons honey, or brown rice syrup or pure maple syrup
- 1 --- red apple with skin on, quartered and cored
- 200 grams blueberries - fresh or frozen, or your choice of other berries

Preheat oven to 170 °C.
Place Apple in the bowl and chop speed 4, 2 seconds.
(if using mixed frozen berries include them in the bowl before chopping to make small chunks)
Scrape down bowl and repeat chop speed 4, 2 seconds if needed. Apple should be chopped in small pieces but not mashed.
Set aside apple (and berry mix if used) in a separate bowl. Don't stress if there is any apple left in the bowl, it will just mix in with the rest of the recipe.
Add almonds to the bowl and grind 20seconds, speed 8.
Add baking powder, and cinnamon and mix 2 seconds, speed 8.
Add eggs, oil and sweetener of choice and mix 20 seconds, speed 4.
Add apple and berries and mix 2 seconds, speed 4.
Divide mixture evenly into a 12 tin muffin tray lined with paper cases.
Bake for 30-35mins.
Tip
This recipe works well with blueberries, but can also work well with a bag of mixed frozen berries as long as you chop them a bit first.
