- 250 gram raw sugar
- 6 eggs
- 300 gram Gluten free self raising flour
- 100g gram olive oil
- 1/2 teaspoon xanthan gum
- 1-2 lemons, Zest and Juice Only

Preheat oven to 180C.
Grease and line a 20 cm cake tin, set aside
Place sugar and eggs into mixing bowl and beat for 30 seconds on Spd 5
Add GF flour and Xanthum gum and mix for 10-15 seconds on Spd 4. Scrape down sides.
Add olive oil and mix for 5 seconds Spd 4
Add Zest and juice of lemon and mix 5 seconds Spd 4
Pour cake mixture into prepared cake tim and bake for 45-50 minutes, or until a skewer inserted into the middle comes out clean.
Tip
This recipe was my Nonna's, as a kid we loved her baking this cake for us and as we grew up we started to bake it ourselves.
I recently found out my daughter has Coeliac Disease and so i adpated this recipe to suit her dietary needs.
Tastes just as good as Nonna's!!
You can also dust with icing sugar once cake is cooled.
