Ingredients

  • 3 --- Gluten free Weetbix, or 1 cup Gluten Free Cornflakes
  • 1 heaped tsp Gluten Free Baking Powder
  • 1 scoop mixed dry fruit, or quinoa
  • 250 g dessicated coconut
  • 1 tsp vanilla
  • 40 grams cocoa, or cacao
  • 125 grams sugar, or sugar substitute
  • 155 grams coconut oil

Recipe's preparation

    Chewy GF Chocolate Slice
  1. Place coconut oil into bowl and melt for around 2 min 65 degrees sp 2.  Time and temp will vary depending on the room temp. (Coconut oil may already be liquid if a hot day so skip this step.)

     

  2. crumble Gluten free weetbix and add to bowl with rest of ingredients.  Mix for 20 seconds sp 4

  3. Press ingredients into a 7" x 11" tray (lined with baking paper)

     

  4. Bake in moderate oven for 15 minutes.

    Ice while hot with chocolate icing (see butter icing in the EDC or Basic Cookbook)  Replace butter with Dairy free margarine or coconut oil.

  5. Cut into squares and leave to cool.

    Yum this is a great recipe. Mine set perfectly, I iced it warm and it was perfect. Thanks for sharing.

    The mixture tastes good but it didn't 'set'.  I've put it in the fridge in the hopes that it is sliceable.  Also, I tried to ice while hot which I shouldn't have done in retrospect as the buttercream icing just melted the second it touched the hot slice.  Will ice once cold from fridge if sliceable.
