Ingredients

A retro recipe for chocolate-studded biscuits with a soft squidgy middle - make plenty as they're guaranteed to be a hit!

  • 150 grams salted butter, softened, cut into cubes
  • 80 grams light brown sugar
  • 80 grams Granulated sugar
  • 1 large egg
  • 225 grams plain flour
  • 250 grams rolled oats
  • 1/2 tsp bicab soda
  • 200 grams chocolate chips or chunks

Recipe's preparation

  1. Preheat the oven to 190C/170C fan/gas 5. Line two baking trays with non-stick baking paper.Put the butter and sugars into bowl and beat 2 minutes speed 4 (until creamy). Add the vanilla extract and egg through top of lid. Beat in the vanilla extract and egg - 2 minutes speed 4. Sieve the flour, bicarbonate of soda and salt.Add with rolled oats to  the mixture and mix speed 3 30 seconds on reverse. You may need to scrape down sides and repeat. Add the chocolate chips mix on reverse 10 seconds speed 2 until well combined.Using a teaspoon, place small mounds of the mixture well apart on the baking trays. Bake in the oven for 8–10 mins until light brown on the edges and still slightly soft in the centLeave on the tray for a couple of minutes to firm up and then transfer to a cooling rack.
