Ingredients

Loaf Ingredients

  • 3 ripe bananas, peeled and roughly chopped
  • 1 apple, washed and quartered (no need to peel or core)
  • 250 grams plain low fat yoghurt
  • 80-100 grams nuts unchopped, eg brazil/hazelnuts/macadamia/almonds
  • 2 eggs
  • 190 grams Wholemeal Self Raising Flour
  • 55 grams skim milk powder
  • 1 teaspoon baking powder
  • 1 teaspoon Nutmeg
  • 3 teaspoons cinnamon
  • 85 grams rolled oats
  • 1/2 cup a mix of cranberries/raisons/seeds, I use pepitas/sunflower/chia seeds etc
  • 45 grams oat bran

Recipe's preparation

  1. Line 20cm (8 inch) loaf baking tray with baking paper and pre-heat fan forced oven to 180 degrees celsius.

    Chop nuts roughly (4-5 seconds, speed 4) - SET ASIDE (no need to wash bowl)

  2. Add apple and banana. Combine 6 seconds, speed 7 until mashed. Scrape down side of bowl.

  3. Add eggs, yoghurt and set aside nuts. CombineCounter-clockwise operation"Counter-clockwise operation" 15 seconds, speed 4 (Use spatula to assist in combining). Scrape down side of bowl.

  4. Add wholemeal self raising flour, skim milk powder, baking powder, cinnamon, nutmeg, oats, mix of cranberries/raisons/seeds, oat bran. Combine Counter-clockwise operation"Counter-clockwise operation" 10 seconds, speed 4. Use spatula to assist. Scrape down sides of bowl and repeat until just combined.

  5. Pour mixture into prepared baking tray. Bake for 45-50 minutes or until the bread is cooked through. Insert a skewer to test - if cooked, the skewer will come out clean. 

  6. Allow the bread to cool in the baking tin for 10 minutes before turning out onto a wire rack to cool completely.

  7. Slice and serve fresh or toasted.

    *FREEZES WELL PRE SLICED*  

Tip

This recipe was converted from a great cookbook called "Feeding the Bump" by Lisa NEAL. It is a really yummy and nutritious loaf that is delicious toasted. I have it when I want a healthy tasty treat! Its best with butter (you are allowed cause there is no other bad stuff in it!)

There are some "different" ingredients in it but its worth doing the shop as the end is worthwile - this way you will have the ingredients for next time. 

I add lots of different things depending on what I have in the cupboard - all sorts of nuts and seeds and chopped fruit can be added. 

I chop up slices and freeze. Pull a slice out when required and toast in the sandwich grill - DELICIOUS!

    I've made this loaf many times and I absolutely love it. It's so versatile and never fails. I always use whatever fruit I have in the fridge (orange, berries, even avocado!) and I also add a whole bunch of seeds/grains too, even green protein powder. I personally don't like the taste of wholemeal flour, so I use spelt or coconut, but it always works out. I make extra and freeze as this is the perfect delicious breakfast on the run. Please make more fabulous recipes like this!! Yummo!

    Made today and it is absolutely delicious highly recommend. I used almond flakes, pecans pistachio and macadamia nuts. For fruit I used cranberries blueberries currants and sultanas with chia and pepitas

    Fabulous healthy loaf, usually make two, then slice and freeze so we have fresh slices when we want them.

    FANTASTIC breakfast loaf! Followed the directions to the letter and it cooked perfectly. For the nuts I used 1/2 hazelnut and 1/2 almonds and for the fruit and seeds I used cranberries, sultanas and sunflower seeds. Delicious! Next time I might add another 1/4 of a cup of dried fruit and maybe some more spices to pep it up a bit (I like my fruit bread full flavoured). I didn't have any oatbran so I whizzed up some oats, worked out a treat. I love that there's no added sugar or fat in the loaf and its really easy to make despite the long list of ingredients. This will be my new go-to winter breakfast (I eat CADA in the warmer months).

    Such an easy and delicious loaf to make. Think this might be a regular in my house. This is an easy way for me to have breakfast in the morning and no effort required. Love it Saundo x

    Yeh it's a great book!! My little one is 8 months old and I think a few people visiting me have seen it on the bench and are wondering when the announcement will be LOL Glad you liked it!

    Forgot how much I loved this book in pregnancy tmrc_emoticons.) 

    easily converted to gf and dairy free subbing yoghurt for coconut milk and psyllium husk or chia "slush" for the milk powder.
