  • 225 grams Butter
  • 200 grams sugar
  • 270 grams golden syrup
  • 540 grams plain flour
  • 1 tablespoon ground ginger, Approx 5 grams
  • 1 teaspoon baking soda
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 160 degrees celsius. Line 2 baking trays with baking paper 

  2. Place butter, sugar and golden syrup into bowl and melt - 55 seconds, 50 degrees, speed 4

  3. Add flour, ginger, baking soda and salt. Combine 20 seconds, speed 5. Scrape down side of bowl and repeat.

  4. Pour mixture into a big mixing bowl (Mixture is quite dense so use the spatula to start and then turn bowl upside down and twist black knob to remove the rest). Allow to cool to handling temperature. 

  5. Halve the mixture. Roll into 2 logs - 3-4 cm in diameter. Set one aside in cling wrap and refrigerate or freeze for later. Cut the second log into 1cm thick slices and place these on the baking tray. Flatten with a fork.

  6. Bake until lightly golden (10-12 minutes). Allow to cool on the tray for 5 minutes then transfer to a wire rack to cool. Store in an airtight container for up to a week.
