Ingredients

Christmas Cake

  • 200 gram raw sugar
  • 60 grams butter (or dairy free alternative)
  • 150 g currants
  • 150 g sultanas
  • 1 tsp mixed spice
  • 1 tsp cinnamon, Ceylon
  • 1 tsp bicarbonate of soda
  • 300 g water
  • 3 eggs
  • 150 g plain flour, Gluten free if desired
  • 150 g self-raising flour, Gluten free if desired
  • 1 tsp xanthan gum, If using GF flour

Recipe's preparation

  1. Add 200g raw sugar and mill 20 sec/speed 10. Scape down bowl.
  2. Add 150g currants, 150g sultanas, 1 tsp mixed spice, 1 tsp ground cinnamon, 1 tsp bi carb, 300g water and boil10 min/100°C/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting" . When finished allow to cool in bowl close to room temp (approx 1 hour)
  3. Meanwhile, preheat oven to 160 degrees. Line a 20cm round rose gold cake tin with baking paper. (I use the cake tin liners from The Mix Shop)
  4. Once cooled, add 3 eggs and 150g plain flour & 150g SR flour & xanthan gum and mix 7 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.
  5. Add to prepared cake tin and bake for 1 hour at 160 degrees or until skewer comes out clean. Allow to cool fully in tin before removing to wire rack.
