Ingredients
Hot Cross Bun Loaf
- 50 g Butter
- 450 g bakers flour
- 7 g Yeast
- 1 tsp salt
- 1 tsp cinnamon
- 1.5 tsp mixed spice
- 50 g brown sugar
- 1 egg (beaten)
- 150 ml milk
- 50 ml hot water
- 85 g sultanas
- 30 g raisins
- 50 g glace cherries (chopped)
CROSSES & GLAZE
- 2 tbsp plain flour
- 2 tsp raw sugar

Melt the butter 1 minute 30 seconds, 80 degrees, speed 1.
Add flour, yeast, salt, cinnamon, spice, sugar, egg, milk and water.
Mix 10 seconds, speed 3.
Knead 3 minutes, dough "Closed lid"
Tip out the dough onto a greased chopping board. Knead in the sultanas, raisins and cherries.
Leave in an oiled bowl covered with Glad wrap somewhere warm until doubled in size (30 mins to 1hr30)
Tip out and divide into 4 oval shapes. Place in a row in the bottom of an oiled bread tin.
Cover with a clean tea towel and leave in a warm place to rise about another hour or until 5cm below the top of the tin.
For the crosses mix the flour into a paste with cold water. Pop ithe paste into a sandwich bag then snip the corner off and pipe some crosses on the top of each piece of your loaf, once it has risen.
Bake for 5 mins at 210 degrees then turn the oven down to 200 for a further 15 mins. Cover with foil loosely when the top is golden brown.
Bake for 5-10 mins more until firm, then take it out the oven and tip onto a wire rack to cool.
Mix the sugar with 1tsp of cold water and brush on the warm loaf.

Tip
Don't worry if it feels like a very heavy loaf, it comes up light and soft when toasted!
