Ingredients

Carrot Cake

  • 300 grams carrot, roughly chopped
  • 5 eggs
  • 200 grams Butter, cubed
  • 3 tbsp granulated sweetener, to taste
  • 65 grams walnuts
  • 50 grams Coconut, shredded or desiccated
  • 150 grams almond meal/flour
  • 1 tsp cinnamon, ground
  • 1 tsp mixed spice
  • 2 tsp baking powder
  • 2 tsp vanilla

Cream Cheese Icing

  • 200 grams cream cheese
  • 2 tbsp granulated sweetener, or to your taste

Recipe's preparation

  1. Carrot cake

    1. Add almonds to bowlClosed lid"Closed lid" 20 seconds, speed 9. Set aside.
    2. Add carrot to bowlClosed lid"Closed lid" 5 seconds, speed 5. Set aside.
    3. Add butter to bowl Closed lid"Closed lid" melt for 2 minutes, 70degrees, speed 2.
    4. Add eggs, sweetener and vanillaClosed lid"Closed lid" 5 seconds, speed 4.
    5. Add carrot, walnuts, coconut, almond meal, spices and baking powder Closed lid"Closed lid" 5 seconds,Counter-clockwise operation"Counter-clockwise operation" speed 4.
    6. Pour into a greased and lined tin. Bake at 180C for 40-50 minutes or until fork pushed in, comes out clean.


    Cream Cheese Icing

    Warm cream cheese in microwave for 20 seconds and stir through sweetener. Add lemon zest if desired. Spread over cake once it has cooled.

    I wonder what this would be like using zucchini as well? My mum used to make a carrot and zucchini cake when I was a kid. Might try subbing some in and see how it goes. Would also lower the carb count.

    This carrot cake takes great! I was a bit worried it would taste too eggy seeing it has 5 eggs in it but I can honestly say that the egg flavour is not overpowering.

    I used stevia as the sweetener. I also used my own recipe for the cream cheese icing (100g cream cheese, 75g butter, 1tsp cinnamon & 5 drops of stevia).

    Will definitely make again. Thanks for a great LCHF recipe.
