Ingredients

Base

  • 100 grams almonds
  • 100 grams Cashews
  • 15 grams Linseeds
  • 60 grams Shredded coconut
  • 55 grams Butter, softened

Filling

  • 200 grams fresh cream
  • 250 grams cream cheese, room temp
  • 20 grams erythrol or xylitol
  • 15-30 grams Maple syrup, depending on taste
  • 1 tsp vanilla extract
  • 2 tsp powdered gelatine, dissolved in 1/4c boiled water
  • 10-15 grams lime juice, depending on taste

Recipe's preparation

    Base
  1. Line slice tin with glad wrap and sed aside

    -Toast nuts, coconut and linseeds in frying pan on high heat until coconut is golden brown and nuts begin to release oils

    -Once toasted, place warm nuts into TM bowl and pulse on Turbo/1sec 3-4 times, until mixture resembles breadcrumbs

    -Add butter to TM bowl in large dollops and stir Counter-clockwise operation"Counter-clockwise operation" /1.5mins/sp2

    -Pour mixture into prepared slice tine and pack down firmly with a spoon or spatula

    -Place in the fridge to set

  2. Filling
  3. Rinse and dry mixing bowl

    -insert butterfly whisk and cream. Whip on sp3 until stiff peaks form, keep an eye on it to avoid over whipping

    -Transfer cream into a bowl and set aside

    -Add cream cheese to bowl and mix 20sec/sp4

    -Scrape down bowl with spatula and add remaining ingredients except gelatine mixture. Mix sp2.5/20sec

    -Mix on sp3 with MC off while slowly pouring in gelatine mixture until fully incorperated

    -Add reserved cream to TM bowl and slowly increase to speed 2 and mix until cream and cream cheese mixture are well incorperated

    -Pour on top of reserved base and refrigerate overnight for best results

     

    Slice and serve with fresh berries or mango

Tip

To make a lower carb version, omit the maple syrup and use 40g of erythritol or xylitol.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
