Ingredients
Cake
- 250 grams Butter
- 190 grams caster sugar
- 3 eggs
- 1 teaspoon vanilla essence / paste
- 1 tablespoon Finely grated lemon rind
- 250 grams sour cream
- 310 grams plain flour
- 1 level teaspoon baking powder
- 1 level teaspoon Bi Carb Soda
Syrup
- 220 grams sugar
- 1 cup orange juice, freshly squeezed
- 2 tablespoons lemon juice, freshly squeezed
- 5 peaches, peeled and cut into wedges

Preheat oven to 160 C
Lightly grease round ring pan.
Add 250 grams butter to Thermomix bowl.
Add 190 grams caster sugar to Thermomix bowl.
Place cup in Thermomix lid. "No counter-clockwise operation" speed 6, 10 seconds.
Add eggs to mixture, one at a time, mixing "No counter-clockwise operation" speed 6, 5 seconds after each egg is added with cup in lid.
Scrape down sides of bowl.

Add to mixture flour, bi carb soda and baking powder. Place cup in lid. "No counter-clockwise operation" Speed 4, 10 seconds.
Spoon batter into prepared pan.
Bake in preheated oven 55-60 minutes or until cake is cooked when tested with a skewer.
Stand cake in pan for 10 minutes then turn onto serving plate.
Place sugar, lemon juice and orange juice in Thermomix bowl. Place cup in lid. "No counter-clockwise operation" 110 C, "Gentle stir setting" 7 minutes.
Add peaches to syrup mixture. Place cup in lid. "Counter-clockwise operation" 90 C, 5 minutes.
Arrange peaches on top of cake and slowly pour syrup over.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
