I'm cooking this todayRecipe's preparation
Place 100g butter 1 lemon zest,2 lemon juice, 2 eggs,1 egg yolk and 150g caster sugar in bowel and mix on speed 7 for 5 sec.
insert butterfly cook for 8 min on 80 deg at speed 3.
store in fridge over night.
once cooled put frozen bluberry in bowel and chop on speed 7 for 30sec, add this to your lemon curd mix.
cup cake mix
Add 100g soft butter, 180g caster sugar,1 tsp vanilla bean,2 eggs,225g self raisin flour,125g milk in bowel and mix on speed 3 for 1min.
put half batter in patty liners then lemon/bluberry curd mix over the top of that and cover with rest of cup cake mixture.
cook on 180 deg for half hr or until brown
Tip
I used nutelex butter and lactose free milk to make it fructose friendly.
cover with a sprinkle of icing suger
