Ingredients

Shortbread

  • 250 g flour
  • 80 g caster sugar
  • 175 g Butter, cold, cubed

Topping

  • 3 lemons, zest and 120 g lemon juice
  • 250 gram white sugar
  • 4 large eggs
  • 50 grams plain flour
  • 1 package raspberries
  • 100 gram white chocolate melts

Recipe's preparation

    Shortbread
  1. Line a shallow bake tray with baking paper. Mix all the ingredients together on turbo (1 second) about 3 to 4 times until it is like breadcrumbs.

    Tip into the prepared tin and bake on 160 degrees for 20 minutes.

  2. Topping
  3. Mix all the topping together and pour over the baked shortbread. Sprinkle in the rasberries and white chocolate buttons (optional). Bake 160 degrees for about 30 minutes, 

Tip

This is gooey and delicious, I had to take a photo in the tin as it was being gobbled by the kids before it was even cool!

    Love this slice - so easy and tart 👏 cut down the sugar in the topping to 150 g (as per the comments) which was perfect. Thank you for such an awesome recipe.

    Mine fit perfectly in a standard slice tin. My raspberries were quite big and didn't submerge well, next time I would cut them in half.

    Yum!
    Used limes instead of lemons.
    Used white choc chips as didn't have melts.
    Used frozen raspberries defrosted.
    Cut back on sugar in topping to 180g - (will try less next time).
    Turned out beautifully. Thank you for a delicious recipe!

    Very yummy. Set beautifully. Didn't make any changes to the recipe. No need for shallow slice tin as mine was almost overflowing. Thanks for the recipe.

    Great flavor although I used a tray too shallow so will try a deeper tray.

    i also decreased the sugar to 180 grams and turned out great.

    Best to use fresh raspberries for this, not the frozen ones :/ (Woolies had none, so I tried the frozen ones).  I took it along to playgroup and everyone loved it and wanted a copy of the recipe, very moreish, thank you tmrc_emoticons.)
