Ingredients
MAPLE DATE BANANA BREAD
- 150 grams Salted butter
- 120 grams Pure Maple Syrup
- 75 grams medjool dates
- 50 grams Milk
- 1 tsp Vanilla Bean Paste
- 3 eggs
- 500 grams bananas, around 4 bananas
- 1 tsp ground cinnamon
- 300 grams plain flour
- 2 tsp baking powder

Preheat your oven to 200degrees
1. Place butter in thermomix bowl melt 3 minutes 50degrees speed 1.
2. add dates(no pitts) blitz 3 seconds speed 7.
3.add maple syrup, milk, vanilla bean paste, eggs and bananas mix for 10-15 seconds speed 4.
4. Insert BUTTERFLY add flour,cinnamon and baking powder mix 5 seconds speed 2. Scrape down bowl and mix 5 seconds again speed 2, it should be blended by then. You do NOT want to overblend so keep an eye on it.
5. Pour into greased bread tin and cook on 200degrees for 1 hour, depending on your oven it could be slightly less or over. Stick a kebab stick in and if it comes out clean its ready .

Tip
IF YOUR BANANA IS OVERRIPE lessen the maple syrup/date content as the more overripe the banana the sweeter it will be. I had 2 overripe and 2 normal when I made this.
I would go 80 grms maple syrup, 40 grams dates if your bananas are black so go for gold and have a rich yummy banana bread and just follow the recipe
We love the banana taste so always put more bananas in, you can put in from 2-4 bananas
If you are dairy intolerant perhaps experiment with coconut oil, I will be making my next batch with coconut oil
If you do not have vanilla bean paste, you can use vanilla essence, use 1 and a half tsp

I was out of brown sugar so was looking for a recipe alternative for a banana bread. I have made some adjustments and found it worked exceptionally well. I have increased melting time by a minute for the butter. Have reduced maple syrup to 80g and dates to 40 g. I have increase milk by 15 g to compensate somewhat reduced liquids. I used 500g of bananas as suggested and it worked very well. Baking temp - having read feedback from many others I have reduced temp to 170c conventional oven and baked for extra ten minutes. It turned out absolutely perfect and is now my favourite recipe!

Megan81:My oven can be a bit like this too, I cover it with foil (I sprinkle the top with seeds so it doesnt stick but you could spray the foil with oil) and take it off for the last 10 mins
lovely and easy cake.... from reading the previous comments about burning, I decided to put baking paper around and above the sides of the tin - baked it for 1hr on 180deg. fan-forced - Worked a treat it was just cooked tho

I make this regularly for my fussy 15 month old that won't eat fruit. I add apple, double the dates and reduce the maple syrup to about 30 mls.
This is delicious! I halved the maple syrup and doubled the dates. I did 50 minutes but mine burnt a bit on top, so will reduce the temperature on my oven next time. I'll definitely make it away! Thanks
