Ingredients

Shortbread

  • 250 grams Butter, softened
  • 1 teaspoon vanilla extract
  • 80 grams icing sugar, sifted
  • 225 grams plain flour, sifted
  • 75 grams cornflour

Buttercream

  • 90 grams Butter, softened
  • 120 grams icing sugar, sifted
  • 1 teaspoon lemon rind, finely grated
  • 1 teaspoon lemon juice

Recipe's preparation

  1. Preheat oven to 160 and line a baking tray with baking paper

  2. place butter, sifted icing sugar, and extract in the bowl

  3. insert butterfly and mix 4 mins, speed 3.

  4. add to bowl half of the sifted flours and mix 30 seconds, speed 3.

  5. add the remainder of the sifted flours and mix 1 minute speed 3.

  6. roll rounded teaspoons of the dough onto the prepared baking tray then use the back of a folk to gently flatten them.

  7. bake for 15 minutes then let cool on tray for 5 minutes before removing.

  8. Buttercream
  9. Place lemon rind into mixing bowl and grate 10 seconds, speed 10.

  10. Add butter and icing sugar and insert butterfly, then mix for 4 mins speed 3. While mixing squeeze lemon juice onto top of lid and let drip into bowl.

  11. Place a teaspoon of buttercream in between 2 biscuits and gently squeeze togther.

    My family thought these were store bought, lovely texture easy to make and a 5 star recipe rating from me. I will attemtp to double the recipe and see how it goes.

    Really lovely flavour! Mine came out very soft but I think I may have undercooked them! I will have another go but they were still delicious!
