Mog's Boiled Banana Cake
- 120 grams Butter
- 150 grams sugar
- 1 teaspoon Grated lemon rind
- 1 teaspoon Milk
- 1 teaspoon Bi Carb Soda
- 3-4 bananas
- 2 eggs
- 220 grams Self Raising Flour

I'm cooking this todayRecipe's preparation
- Prepare cake tin(either 20cm round, square or loaf tin) by lining with baking paper.
- Add butter,sugar,lemon zest,milk,bananas and bi carb soda to mixing bowl.
Bring mixture to boil 6 minutes, 120 degrees, Speed -
"Gentle stir setting" Spoon soft. Add extra time if needed. - Cool mixture in bowl to approximately 50 degrees. You can put in the fridge to speed up this process.(You can check the temperature by placing the bowl back into your TM, bowl temp can be seen in temperature window.
Set oven to 170 degrees C fan forced. - WIthout MC,Set time for 30 seconds and turn to speed 3, meanwhile add eggs through mixing bowl lid.
- Add SR flour and mix 10 Seconds Speed 4. Scrape down sides of bowl with spatula. Mix a further 10 seconds Speed 4.
- Pour into prepared cake tin and bake 30-40 minutes at 170 degrees C fan forced.
- Let cool in tin for 5 minutes then turn out onto wire rack to cool.
Ice with cream cheese icing if desired.
