Ingredients

Koulourakia

  • 250 grams sugar
  • 1 orange peel
  • 180 grams Butter

  • juice of 1 orange
  • 650 gram 00 flour
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoon baking powder

Recipe's preparation

  1. 1. Place 250g sugar and the orange peel into the bowl and grind for 20 seconds, speed 10.
  2. 2. Cut 180g butter into cubes and add to the bowl. Mix for 3 minutes on speed 4, until light and creamy.
  3. 3. Beat the 3 eggs in a separate bowl. Put aside 3 tablespoons in a small bowl to brush over biscuits before baking. Add the remaining egg into the bowl, then add the 1 tsp vanilla essence and the orange juice. Beat for 1 minute on speed 4.
  4. 4. Add the 650g of flour, 1/2 tsp cinnamon, and 2 tsp baking soda and mix for 10 seconds on speed 6.
  5. 5.Dough mode"Dough mode" for one minute. Use the spatula through the opening to help thoroughly mix the dough. Then turn dough and shape into a rectangular block. The dough will be sticky but do not add any more flour. Place in the fridge to chill for an hour.
  6. 6. Take the dough out of the fridge ten minutes before rolling the biscuits. Using small cookie scoop or dessert spoon scoop out small portions of dough about the size of a small walnut. Roll out to a long thin piece, approx 20cm long, then double over and twist to shape the biscuit.
  7. 7. Place onto a lined baking tray. Glaze with egg wash and sprinkle with sesame seeds(optional).
  8. 8. Bake in 180 degrees oven for approx 12 minutes.
  9. 9. Cool on a wire rack and then store in an airtight container. These will keep for a few weeks.
