Recipe's preparation

  1. Preheat your oven to 170 degrees and prepare 2 baking trays.

    1. Melt butter, golden syrup and water in TM for 2m30s on 100 degrees, speed 2.  Ensure it's all melted.

    2. Add the bi-carb and mix for 15 seconds on speed 3.  Scrape down and mix for a further 15 seconds, speed 3.

    3. Add all remaining ingredients.  Mix on speed 3 for 15 seconds, scrape down and mix for a further 15 seconds, speed 3.

    4. Spoon into round balls, around the size of a large teaspoon and place on baking tray.  Flatten before putting in the oven.  They will not spread too much or rise, so you can keep them relatively close to together.

    5. Bake at 170 degrees for 10-12 minutes depending on how brown you like them.

I find that these cookies stay nice and soft in the middle for a few days.  If they last!
