Ingredients

Orange and Almond Cake

  • 5 large eggs, at room temperature (separated )
  • 250 g caster sugar, or mill your own raw
  • 85 g Gluten free plain flour
  • 250 g Almonds (raw)
  • 1 tsp vanilla extract
  • 160 g fresh orange juice
  • 1 pinch cream of tartar
  • Sifted Icing Sugar to Dust

Recipe's preparation

  1. Place Almonds inClosed lid"Closed lid" mill for 10sec on speed 9. 

    Put aside and clean bowl

  2. Pre Heat oven 170' Fan Force

    Seperate eggs

    Insert Butterfly add Egg Yolks and Sugar

    Beat 1min30 speed 1.5

    Should apear pale and creamy

    Add Flour, Almond meal, vanilla, and Orange juice 

    Mix 1min speed 1

    Place mixture into large bowl and set aside.

    Clean and DryClosed lid"Closed lid" and Butterfly 

     

  3. Insert Butterfly

    Place egg whites and a pinch of Cream of tartar

    Whisk 2min speed 3.5

     

  4. Fold 1/3 of the Egg whites into Almond mixture to loosen

    Gently fold in remaining Egg Whites to combine.

  5. Spoon mixture into prepared springform tin.

    Gently smooth out the top 

    Bake for 40-50 minutes or until golden and firm in the middle.

    Allow cake to cool in tin before removing

Tip

This cake can also be made with normal flour if you dont need to be gluten free.

    Great recipe, thank you! So light compared to most orange and almond cakes and keeps really well. I added orange rind to the egg and sugar mix after it was whipped to add a bit more flavour.

    This is the best cake and GF, so easy!!! Doesn't last long in our house
