Ingredients
Paleo Banana Bread
- 3 eggs separated
- 25 grams agave syrup
- 25 grams macadamia oil
- 3 Bananas (small)
- 1 tsp vanilla essence
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 200 grams almond meal
- 80 grams walnuts

Pre- heat oven to 180 degrees
Insert butterfly & cream the egg yolk & agave on speed 4 for 2 minutes until light & fluffy
Add the macadamia oil, vanilla & bananas & mix on speed 4 for 1 minute
Remove the butterfly & mix the cinnamon, baking powder & almond meal on speed 7 for 30 sec
Pour batter into another bowl. Clean TM bowl & place egg yolks in TM bowl. Beat eggs whites until soft peaks form, using the instructions from the thermomix basic's cookbook.. Sometimes I beat the eggs whites in a separate bowl using the hand mixer.
Gradually fold egg whites into banana mixture until all combined
Finally add roughly chopped walnuts to the mixture
Pour batter into a loaf tin & bake for 45 minutes or until cooked through
Remove & cool

Tip
This recipe can have many variations. Sometimes I add 100g of sugar free milk chocolate or 50 grams of chia seeds. If you like nuts, you could substitute the walnuts for pecans.

Any photos? Would help to see how it comes out and can butter be used instead of the oil. I guess should be fine...i like the idea of egg white being wipped and might try w/o the photo anyway.

This was lovely - i have a hot oven so 30 mins still burnt the outside of mine because of the egg whites, so next time i would do a little less time and a little lower oven temp... but as i said thats my hot oven! But good info for anyone else with a hot and/or tempermental oven. Also i didn't have madadamia oil so used rice bran which worked fine. So light and fluffy it was beautiful and dissapeared in our house very quickly.
