  • 3 --- parsnip, 3 cups (grated)
  • 70 g walnuts, chopped
  • 200 g caster sugar, or allulose
  • 2 tsp ground cinnamon
  • 200 g self-raising flour
  • 4 eggs, lightly whisked
  • 2 tsp vanilla extract
  • 1/2 --- peanut oil, 1/2 cup peanut oil
  • 1/2 sunflower oil, 1/2 cup sunflower oil

Recipe's preparation

  1. Preheat oven to 170 degGrease a 25cm loose bottomed cake tin and line base with baking paperPlace oil, sugar (or allulose) and eggs into TM6 bowl10 sec/speed 4, then add both oils and vanilla extract, flour,cinnamon, and walnuts mix to combine- don't over mix5 sec/speed 2, 3 grated parsnip Spread into prepared tin and bake until the top bounces back when pressed and a skewer inserted into the centre comes out clean (55-60 minutes).
    Allow to cool before slicing in half through the middle and spread with one third of Cream Cheese Icing then remainder on top of cake, sprinkle with some chopped walnuts.
    **Icing: Place softened butter, cream cheese, lemon zest, juice and icing sugar in TM6 bowl, blend until smooth, thenCream Cheese Icing: 75g butter softened, 250g cream cheese, 1 lemon, finely grated zest and juice of, 4 cups icing sugar, 1 orange, coarsely shredded zest of. spread over top and sides of cake. Garnish with orange zest.1 min/speed 8
