Ingredients
Easy Peasy Carrot Cke
- 200 g oil
- 400 g sugar (raw, or white), I add less when using pineapple
- 4 --- small eggs
- 200 g wholemeal flour
- 200 g plain flour
- 1/4 tsp salt
- 2 tsp cinnamon
- 1 tsp mixed spice
- 1 tsp ground ginger
- 600 g Grated Carrot
- 2 tsp baking soda
- 1 level tbsp orange juice
- 200 g crushed pineapple
Cream Cheese Icing
- 75 g softened butter
- 250 g cream cheese
- 1 --- lemon finely grated and juiced
- 800 g icing sugar
- 1 zested orange

- Preheat oven to 160 deg fan bake
Grease a 25cm loose bottomed cake tin and line base with baking paper
Place oil, sugar and eggs into TM6 bowl10 sec/speed 3 1 cup neutral oil 2 cups raw sugar, or white sugar 4 small eggs
Add both flours, salt, cinnamon, mixed spice, ginger and grated carrot and pineapple- mix to combine- don't over mix5 sec/speed 2 1 cup wholemeal flour 1 cup plain flour 1/4 tsp salt 1 tsp mixed spice 1 tsp ground ginger 3 cups grated carrot (about 3 medium carrots
Dissolve baking soda in orange juice and pulse into cake 2 tsp baking soda 1 tbsp orange juice mixture 5 sec/speed 2
Spread into prepared tin and bake until the top bounces back when pressed and a skewer inserted into the centre comes out clean (55-60 minutes).
Allow to cool before icing with Cream Cheese Icing.
**Icing: Place softened butter, cream cheese, lemon zest, juice and icing sugar in TM6 bowl, blend until smooth, thenCream Cheese Icing: 75g butter softened, 250g cream cheese, 1 lemon, finely grated zest and juice of, 4 cups icing sugar, 1 orange, coarsely shredded zest of. spread over top and sides of cake. Garnish with orange zest.1 min/speed 8
