Ingredients

Banana Cake

  • 280 grams banana
  • 2 teaspoons lemon juice
  • 420 grams plain flour
  • 1 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 200 grams Butter, softened
  • 520 grams sugar
  • 3 eggs
  • 2 teaspoons Vanilla Bean Paste
  • 355 grams buttermilk

Cream Cheese Icing

  • 250 grams cream cheese
  • 1 teaspoon Vanilla Bean Paste
  • 115 grams Butter
  • 350 grams icing sugar

Recipe's preparation

    Cake
  1. Preheat oven to 160 degrees fan force. 

    Grease and line a 20cm round cake tin

  2. Mill sugar 10sec/speed 10, set aside in seperate bowl

  3. Mix banana & lemon juice 5sec/speed 5, set aside in seperate bowl

  4. Cream butter & sugar, 30sec/speed 4 

  5. Beat in eggs one at a time, 12sec/speed 5. Add vanilla and beat for a further 3 seconds

  6. Add flour, baking soda, baking powder & Salt, mix 20sec/speed 4 

  7. Beat in buttermilk, 10sec/ speed 4

  8. Stir in banana, 20sec/speed 4. If mixture is not well combined repeat steo. 

  9. Cook for 1-1.5 hours or until skewer comes out clean 

    Time varies depending on ovens, I have had it cook in 1 hour and also 1.5 hours. 

  10. Cream Cheese Icing
  11. Beat all ingredients on speed 5 until well combined

    You can adjust quantities to suit your tastes

Tip

FREEZE THE CAKE FOR 45MIN IN THE TIN IMMEDIATELY AFTER REMOVING FROM OVEN. This step will ensure the cake is moist.

Cook cake in a small tin, this will create a higher cake. Cooking time will increase.

Your cake may begin to brown on top, covering the top in foil will slow this process. 

Decorating tips

Make a layered cake and use the icing between layers and sparingly around the cake to make it a naked cake.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
